Coupe (a ballet step common in Jazz dance) is often used as a connecting step. The foot in coupe is positioned at the ankle, either in front or behind. In this lesson, flex and pointe refers to the foot. Flex is when the toes are facing up towards the ceiling and pointe is when the toes reach towards the floor.
